Spaghetti Squash X Shrimp Scampi

Healthy eating can be a difficult task to tackle, especially when your favorite food is bread! However, I am happy to announce that I have finally found a healthy substitute! I decided to do some research, after talking with my mother who is a lover of all things natural, and came across this amazing thing called spaghetti squash. Spaghetti squash can be baked, boiled, steamed, and/or microwaved. It can be served with or without sauce, as a substitute for pasta. The seeds can be roasted, similar to pumpkin seeds, and they taste amazing!

Here you will find the recipe that I used. It's pretty simple. Try it out and let me know what you think!

 
 

Step 1: Fine a nice yellow spaghetti squash and a super sharp knife.

 
 

Step 2: Wiggle your knife through the squash. **Caution** If you do this method, the squash will be super hard so take your time, and be patient!

 
 

Step 3: Use a spoon and remove all the seeds out of the squash. You should set them aside and roast them later for a healthy little treat!

 
 

Step 4: Lay spaghetti squash open end down and place in the oven at 400 degrees.

 
 

Step 5: While your squash is cooking, unthaw the shrimp

 
 

                        Step 6: Determine how you will like to cook your shrimp. I decided to do a scampi rendition.

 
 

Step 7: Season your shrimp to perfection.

 
 

Step 8: Preheat the pan and throw in the 2 tbsp of butter. Once the butter has melted, throw in the shrimp. Flip consistently till cooked.

Step 9: Poke a fork through the spaghetti squash, if it goes through easily it is done, if not, keep it in the oven a 5 additional minutes or until done.

Step 10: Take a fork and scrape out the inside of the spaghetti squash.

 
 

Step 10: Place all the noodles in a bowl and add a dash of salt

Step 11: Add the shrimp to your spaghetti squash! Enjoy!
